Weekly Meal Plan


I have started off my Saturday with motivation and determination to get my apartment clean and organized today. To get me started I decided to fuel up by going out to get me some subway. I love subway so much. Every time I go I think of when my sister Susan and I would go almost every day for lunch. We went so much the workers and owners knew us and we didn't even have to say what we wanted. It was great!

Now I have my belly full of turkey sub I am ready to tackle my day. First off I have decided to be more organized and make a weekly meal plan. I started this process this morning and I think it took me like an hour or more. But to be truthful, facebook and the pioneer woman's blog made this process so long by distracting me. I managed to come up with my list by getting some suggestions from my good friend Katie and by visiting the pioneer woman's blog.

So here is my weekly meal plan. Some of the meals are going to be a challenge for me, but I am up for the challenge.

Saturday- Herb Roasted Chicken with rice and beans

Sunday- I am going down to Clover, SC to celebrate my niece's 2nd birthday party. I believe Joe is making a beef stew or something. Can't wait to see my whole family!

Monday- BBQ Chicken with homemade Mac n Cheese: got this suggestion from my good friend Katie. I do need to get the fine details from Katie or ask Reiggin for his technique of how to do BBQ Chicken.

Tuesday- Cheeseburger Hamburger Helper, my favorite!

Wednesday- Since Wednesday is my bowling night I always choose something quick and easy. This week I am doing Stouffer's Lasagna and garlic bread.

Thursday- Beef with Snow Peas over rice from The Pioneer Woman

Friday- Tilapia my mother's recipe, with parmesan cheese on top of the tilapia

Saturday- Pork Chops with mash potatoes and gravy

Sunday- Chicken Thighs are on sale at Food Lion. So cooking them up with some mixed vegetables as the side item.

For lunches I believe I will be doing lunch meat and soap though out the week. I really need some new ideas for Virginia's lunches. But that is another project that I hope to tackle this weekend. Now I am off to clean out my refrigerator. Also plan to clean the whole kitchen and organize it with the help from Reiggin.

If you like turkey, we have a great turkey meatloaf recipe. You can't even tell it's turkey!!

Reiggin may, but I am not a big fan of meatloaf.

I'm coming over for dinner on Tuesday. :) My family doesn't like Hamburger Helper, but I LOVE the cheeseburger kind. It's my fave too!
